We weren't surprised when we discovered our most popular recipe last week was a cold, mini-sized dessert recipe. People were preparing for Memorial Day weekend get-togethers where crowd-pleasing desserts are always a must, and these Mini No-Bake Cheesecakes filled that need perfectly.

These minis are similar, but you won't need a knife for cutting, a pie server for lifting, or forks for eating. They’re bite-sized and easy to snatch from a pretty serving tray and pop in your mouth—perfect for a summer dessert table.

They’re also simple and quick to make. They have a 30-minute prep time and a three-hour chilling time before they're topped with fruit. The recipe is also very easy to double or triple, depending on how many servings you need.

If you’re looking to make things easier on the day of your party, you can prepare these cheesecakes up to five days ahead of time and keep them stored—without the fruit topping—in an airtight container in the fridge.
